Menu Plan Monday

Howdy everyone! How was your weekend? I am soo tired - we played hard (had a great time at the fair) and worked even harder! We tackled a front flower bed (removed all the shrubs and rocks) and I think every bone in my body hurts...but, it's a good hurt! I am so glad to get that checked off my to-do list - yay!

Here is the menu for the week:

MONDAY: Crock Pot Chicken and Stuffing
TUESDAY: tacos
WEDNESDAY: Parmesan Crusted Chicken with Tomato and Basil served with Oven-crisp potatoes - looks delicious!

  
THURSDAY: Crock Pot Hobo Dinner
FRIDAY: leftovers

I met a sweet soul last week, Holly, (took a photography class she teaches) and she told me about the local co-op. We are going to join and I am so excited! I had a look at all the organic foods that are offered and I can't wait to place my order. This is something that has been on my heart to do for my family for a long time now and I think we will benefit greatly from eating better foods. So, I am going to start planning my meals around the foods I get from the co-op. They offer a lot of variety - organic milk, free-range eggs and even buffalo meat. It should be really interesting and a first step for our family towards healthy living!

It's official. We can't be friends. Healthy? Yuck. Give me oreos and dr. pepper. :-) When you mentioned Holly I thought for a second my Holly, but then I realized who you were talking about. Glad you liked it... I took a class from her back when Claire was little. She is a talented girl!
